Baklava is believed to have originated during the Byzantine Greek Empire. But the Greeks and the Turks are still not in agreement about which of them first invented it. Some historians still claim that the baklava recipe has its roots in Ancient Greece, where they made the gastrin, a sweet very similar to the current baklava. Others say that baklava originates from the Byzantine era. Greek Professor Speros Vryonis defends the Byzantine thesis by alluding to similarities with a Greek dessert called kopton. Regardless of the origin we must note that the name has Turkish origin and that is because during the ottoman empire those sweets that were introduced to the ottomans got popularity. It is a layered dessert that is made from very thin pieces of pastry called phyllo dough (also called filo dough), nuts like pistachio or walnut, honey, and a syrup scented with rosewater, cardamom, cinnamon, orange blossom, or saffron. Sometimes, even cashew is used in modern Turkish baklava. The dessert should be crisp, moist, sweet, and lightly fragrant.
